What I eat in a day – Healthy and Tasty meals #7

Hi guys! Today I am sharing what i eat in a day for breakfast, lunch and dinner. All this recipes are very healthy and tasty and quite simple to make. These recipes are also vegan and gluten free. So everyone can enjoy them.

I usually start my day with warm lemon water. After half an hour, I started preparing breakfast. So for breakfast today, I made this very easy and delicious vegan whole wheat pancakes. I love to eat pancakes for breakfast and I paired the pancakes with fresh fruits and maple syrup. Recipe for the pancakes can be found here – Vegan Whole wheat pancakes.

 love eating buddha bowls for lunch and dinner. They are very healthy and nutritious. Today I made this Lunch Buddha bowl Quinoa, chickpeas, apple and veggies. This buddha bowl is packed with complex carb, protein and healthy fats. To make this buddha bowl, I cooked quinoa and chopped up some veggies and an apple for some freshness. I added cooked chickpeas as well for some protein.

For the evening snack, I took brown rice rice cake and then applied a layer of hummus, then I added spinach and chopped orange bell pepper. I love eating rice cake since it can stay good for longer and it is made with minimum ingredients. I usually pair rice cakes with hummus and veggies, nut butter and fruits.

For dinner today, I made this super simple, quick and easy Salad bowl. I had come cooked quinoa in the fridge so I chopped up some veggies like spinach, radish and cabbage since that what I had on hand. And I mixed the veggies with the quinoa. For salad dressing, I mixed lime juice, honey, olive oil, salt and pepper. To complete this yummy salad bowl, I roasted cauliflower and potatoes.
