Hi guys! Today I am sharing what i eat in a day for breakfast, lunch and dinner. All this recipes are very healthy and tasty and quite simple to make. These recipes are also vegan and gluten free. So everyone can enjoy them.
I start my day with warm lemon water, I added half teaspoon matcha today to my lemon water. After half an hour, I started preparing breakfast. So for breakfast today, I made this very easy and delicious tofu and veggie toast. To make the toast, I sautéed some onion and yellow bell pepper, then I added some frozen corn. I added salt and pepper to taste along with some turmeric. Then I added some cubed tofu. Add this mixture on your favorite bread, drizzle some sriracha and enjoy!.
For lunch today, I made this super simple and quick veggies and tofu salad. I have got ready made salad pack form my grocery store. Its easy way to make a salad when you are busy. I was quite busy that day, so I took some salad out of the salad pack and added some tofu on it to make it more wholesome meal. For tofu, I pan fried it with some oil, salt and pepper. Make sure to use non-stick pan so that you don’t have to use so much oil.
By this time you guys already know how much I love coffee. After I finished my work, I went to nearby cafe and they have many amazing flavors of latte and all of them are always beautifully decorated with latte art. This time I got hazelnut latte and it was so tasty and delicious .
For dinner today, I made this super simple, quick and easy Quinoa and roasted sweet potato. This is vegan and gluten free dinner option. For sweet potatoes, I roasted them in the oven with salt and pepper. I like to keep the seasoning very simple. For quinoa, I made quinoa, I cooked it in pulao style. And to prepare it, heat up some oil in pan, add mustard seeds, veggies and then salt, pepper and turmeric. Cook it like we cook the regular quinoa. This quinoa pulao is so simple and easy to take and it is very tasty as well because quinoa will absorb all the flavors while its cooking.
