Hi guys! Today I am sharing what i eat in a day for breakfast, lunch and dinner. All this recipes are very healthy and tasty and quite simple to make. These recipes are also vegan and gluten free. So everyone can enjoy them.
For breakfast, I made this green goodness smoothie bowl and topped it with almonds, goji berries and pumpkin seeds. The base of the smoothie bow is frozen banana, spinach, peanut butter, protein powder and almond milk. And I always like to top it with some amazing nuts and seeds. Almonds are high in healthy fats and goji berries are high in antioxidants.
For lunch, I made this savoury waffles. For the waffle batter, I used chickpea flour, little yogurt and water. I also added salt and pepper, frozen corn and chopped cilantro. If you can tolerate gluten, you can also add some semolina in the batter. That will also taste good. You can add other veggies as well like ginger, garlic, green peas, spinach.
For Dinner, I cooked some pasta and mixed it with the pesto that I had in the fridge and made a quick quinoa and veggie salad. To prepare salad, I cooked quinoa along with corn and edamame and once it is cooked and cooled, I added chopped cucumber, tomato, purple cabbage and onion. I also added juice of half of lemon for taste.
