Chickpea Salad is quick, simple and easy to make. This chickpea salad is healthy, nutritious and delicious. This salad is vegan as well as gluten-free as Chickpeas are vegan as well as gluten-free. Chickpeas are great source of plant-based protein.
To prepare chickpea salad all we need is few simple ingredients. If you have cooked chickpeas ready then its very quick to prepare. So in a large bowl take cooked chickpeas. Chop tomatoes, cucumber and cilantro. I have used cherry tomatoes but you can you roma tomatoes as well. Here I have used simple dressing prepared from olive oil and lemon juice. This tangy dressing pairs perfectly with chickpeas.
Chickpea Salad Recipe
- 1 Cup Boiled Chickpeas
- 5-6 Cherry tomatoes
- ¼ Cup Boiled corn
- ¼ Cup Cucumber, chopped
- 2 Tablespoons Cilantro, chopped
- 2 Teaspoons Extra virgin olive oil
- 2 Teaspoons Lime juice
- Salt and pepper to taste
- Step 1 In a small bowl whisk together oil, lime juice, salt and pepper and set aside.
- Step 2 In another bowl, mix boiled chickpeas, corn , chopped cucumber and cilantro. Pour dressing and mix well.
